Guilt-free Paleo Collagen Chocolate Chip Cookie Skillet Recipe

Ingredients
  • 2 eggs, room temperature
  • ½ cup of date sugar
  • ½ cup of coconut oil
  • 2 cups almond flour
  • 1 scoop [url href=”http://tracking.vitalproteins.com/SHzP” target=”_blank” rel=”nofollow”]Vanilla Collagen Peptides[/url]
  • ¼ t ground cinnamon
  • ½ t sea salt
  • ½-1 cup of dark chocolate chips
  • Flaked sea salt, for topping
Instructions
  1. Preheat oven to 350 F.
  2. In a large mixing bowl, whisk together eggs, date sugar and coconut oil until smooth and creamy.
  3. Add almond flour, Vanilla Collagen Peptides, ground cinnamon and sea salt and whisk until well-combined.
  4. Fold in dark chocolate chips.
  5. Pour cookie batter into a 10-inch cast iron skillet.
  6. Bake for 20 minutes and let cool for at least 5 minutes.
  7. Top with flaked sea salt, if desired.
