Chimichurri Burgers with Avocado & Monterey Jack and Cabbage Slaw

As you know I got to try HelloFresh, a meal delivery subscription service that delivers farm fresh ready to make meals to your door. I absolutely loved it, so I thought I would share with you a few of the recipes I got to try. This meal box also came with grass-fed Angus beef. Everything you need is in the box for each meal you have pre-selected.

I hope you try this recipe, I wasn’t a fan of cilantro until I made this. I was a little skeptical because I have never liked cilantro but I wanted to try the full experience so I followed the recipe. Guess what?! I loved it! I hope you do too!

Chimichurri Burgers with Avocado & Monterey Jack and Cabbage Slaw

Ingredients
  • 1 pkg(285g) Ground Beef
  • 2 Brioche Buns (or gluten-free buns)
  • Monterey Jack Cheese
  • Mayonnaise
  • Coleslaw Mix
  • 1 Avocado
  • 1 Small Bundle of Parsley (14g)
  • 1 Small Bundle of Cilantro (14g)
  • 1 tbsp of White Wine Vinegar
  • 2 Cloves of Garlic
  • 2 Campari Tomatoes
  • Olive or Avocado Oil
  • 1/2 tsp of Sugar
  • Salt
  • Black pepper
Instructions
  1. Finely chop the cilantro and parsley.
  2. Mince or grate the garlic. Slice the tomato into 1/4-inch rounds
  3. MAKE THE SLAW: In a large bowl, stir the mayonnaise, 1 tbsp vinegar and 1/2 tsp sugar. Add the coleslaw mix and season with salt and pepper.
  4. MAKE CHIMICHURRI: In a small bowl, combine the cilantro, parsley, half the garlic, 1 tbsp of vinegar and a drizzle of oil. Season with salt & pepper to taste (a pinch of each).
  5. COOK THE BURGERS: In a medium bowl, combine the remaining garlic and ground beef. For the mixture into 5-inch wide burger patties (double for 4 people). Season on both sides with salt and pepper.
  6. Heat a large non-stick pan over medium-high heat. Add a drizzle of oil, then the burgers to the pan. Cook for 3-5 min per side, or until cooked to desired doneness. (TIP: insert thermometer into cooked meat should display an internal temperature of 160F)
  7. After you flip the burgers, sprinkle with Monterey Jack cheese over-top and cover the pan to melt.
  8. TOAST THE BUNS: Split the buns and place in the oven to toast until just golden, 1-2 min. (TIP: Keep an eye on it so it doesn’t burn!)
  9. Halve, pit, and thinly slice half the avocado.
  10. Cube remaining avocado and add to the slaw.
  11. Layer each bun with a generous spoonful of chimichurri then the burger, avocado slices, and tomato slices. Serve the slaw to the side.
Notes
If you are making this for four people, double the ingredients.
