Recipes to Mend a Broken Heart: Gluten Free Banana Bread Blues

Nothing says comfort like a warm slice of banana bread. It’s one of my favourite treats I like to make when I want something sweet, decadent and somewhat healthy. So I thought I would share my gluten free recipe for banana bread. It’s a lighter and healthier alternative to what you would buy in a store and if you have a gluten intolerance (like I do!) even better.

So I am not sure where you are in terms of how you are feeling. I am sure it has sunk in…it’s okay. There isn’t much you can do to make things right. Not all relationships can repair themselves and once it’s done; it’s done. I can feel what you are feeling in the pit of my stomach as I write this. Ugh, it’s not the best feeling and it can last quite a while. Just know, it doesn’t last forever. Tonight you have decided to stay home and watch a few movies. Sometimes the last thing you need is to be out and about around people. Before you decide to indulge in something really bad I think you should get in the kitchen and bake something for yourself. Cooking is actually quite therapeutic. Once you are done making this delicious treat, make a cup of Ginger Tea, and find a cool movie to watch; preferably something that will make you laugh.

2 cups oat flour
1 tbsp almond flour
1 tsp baking soda
1/2 baking powder
1/2 tsp salt
1/2 tsp all spice
1/2 tsp cinnamon
3 ripe bananas
2 eggs
1 tsp vanilla
1/2 cup plain greek yogurt
1/2 organic butter or substitute with coconut oil
3/4 cup brown sugar
1/3 cup vegan dark chocolate chips
1/3 cup cocoa nibs

PREHEAT oven to 350F.

STIR oat flour with almond flour, baking soda, baking powder and salt in a medium bowl.

WHISK butter with sugar in a medium bowl. Whisk in two eggs, then add mashed bananas. Then add flour mixture until combined. Spoon into a medium non-stick loaf pan.

BAKE in centre of oven for an hour. To ensure that it is ready a skewer inserted into the centre of loaf should come out clean. Let cool at room temperature before slicing.

You can freeze slices to eat later. Cut sheets of parchment paper into medium sized squares. I would use small freezer bags or if you have a vacuum seal even better. Layer two slices of banana bread with parchment paper in between. Making small portions is best. When you feel like something sweet. Remove from the freezer and warm them up.
